1 pkg. baby spinach
1/2 red onion, sliced thin
1/2 pint strawberries, sliced
3 oz. Gorgonzola cheese, crumbled
1/3 cup cashews

1 tbsp. seedless strawberry or raspberry jam
1/2 tbsp. Dijon mustard
1/4 cup raspberry vinegar
6 tbsp. extra-virgin olive oil
salt and pepper, to taste

Toss salad ingredients together in a large bowl. In another bowl, mix together jam, mustard, vinegar, salt, and pepper. Gradually add olive oil, whisking until all ingredients are blended.
