1 egg white, beaten stiff 3/4 cup packed brown sugar 1 tsp pure vanilla 2 cups pecan halves
Beat egg white until stiff peaks form. Add sugar and vanilla. Drop pecan halves in the wet mixture to cover completely. Take pecans out individually and place on a large greased baking sheet 2 inches apart. Bake at 250º for 30 mins. After 30 mins, turn off the oven and leave pecans in the oven for an additional 30 mins. Take out of the oven and let cool completely.
