1 (22 oz) pkg. frozen mashed potatoes
1 lb. ground beef
1 onion chopped
1/2 C. frozen sliced carrot
1/2 C. shredded cheddar
2 Tbsp. all purpose flour
2 tsp. salt
1/2 tsp. pepper
1 C. beef broth
1 large egg; beaten

Directions:
Directions:
Cook potatoes according to package directions. Cook beef and onions in a large skillet over medium heat until beef is no longer pink. Drain and return to skillet, add carrot. Stir in flour, 1 tsp. salt, and 1/4 tsp. pepper. Add broth and cook, stirring constantly, for 3 min. or until thickened. Spoon mixture into an 11 x 7" baking dish.

Stir together potatoes, egg, remaining 1 tsp. salt and remaining 1/4 tsp. pepper. Spoon over beef mixture.

Bake at 350 F. for 25 min. Sprinkle with cheese and bake 5 more min.
