2 pounds baking potatoes, baked and cooled
2 cups cooked chicken, chopped
1 cup chopped carrots
1 cup frozen peas, thawed and drained
1 cup chopped sweet pickles
4 hard boiled eggs, peeled and chopped
1 cup mayo
3 tbsp fresh lemon juice
1/2 tsp salt
1/2 tsp pepper

Directions:
Directions:
Peel potatoes and cut into 1/2" cubes. In a large bowl, combine potatoes, chicken, carrots, peas, pickles, and eggs. In a small bowl, combine mayo, lemon juice, salt, pepper. Add to potatoe mixture, tossing gently to coat. Cover and chill for at least 4 hours. Serve on pita wedges.
