1 1/2 lb. beef stew meat
1 Tbsp. olive oil
1 (30 oz) bag frozen mixed vegetables (peas, carrots, green beans, and lima beans)
1 (15 oz) can tomato sauce
1 (14.5 oz) can diced petite Italian style tomatoes
1 med. baking potato, peeled and diced
1 celery rib, chopped
1 med. onion, diced
2 minced garlic cloves
1/2 C. ketchup
2 chicken bouillon cubes
1/2 tsp. pepper

Directions:
Directions:
1) Cook meat in hot oil over med-high heat in large Dutch oven 6 - 8 min. or until browned.
2) Stir in mixed vegetables and next 9 ingredients and 1 1/2 qts. water stirring to loosen particles from the bottom of the Dutch oven. Bring mixture to a boil over med-high heat; cover; reduce heat to low and simmer, stirring occasionally, 55 - 60 min. or until potatoes are tender.
