2 gallon of large green cucumbers
2 cups pickling Salt
8 1/2 qts water
7 cups vinegar
1 tbsp powdered alum
4 sticks of cinnamon
1 tsp green food coloring
12 cups sugar

Directions:
Directions:
Cut unpeeled cucumbers in thirds crosswise, remove seeds. Slice in 1/2" rings ( should make 2 gallon). Add salt and 8 qts of water and let stand 5 days. Drain well. Combine 1 cup vinegar, alum and food color in kettle. Add cucumber rings and water to cover. Simmer 2 hours. Drain. Make syrup by bringing to boil 6 cups vinegar, 2 cups water, sugar and cinnamon,on. Pour over rings and let stand over night. Drain and reheat the syrup, pour over rings. Do this for 3 days. On third day can.
