Red Velvet Cake Recipe

1 tsp. baking soda
1 tsp. cocoa
1 tsp. baking powder
2 1/2 cups flour
1 1/2 cups sugar
1 tsp. white vinegar
1 oz. red food coloring
1 tsp. vanilla
2 eggs
1 1/2 cup vegetable oil (Wesson)
1 cup buttermilk

1 box powdered sugar
8 oz. cream cheese
1 stick margarine at room temperature
2 cups toasted pecans

For the cake:
Mix liquids together and beat well. Sift in the dry ingredients. Mix well. Use 2-9" layer pans or 3-8" pans. Bake for 30 minutes in greased and floured pans (or spray with Pam). Let cool before frosting.

Mix first 3 ingredients well and spread on the cake carefully. Place toasted pecans on top or all around the cake. Refrigerate.
