1 lg. pork loin (Costco Size)
2 lg. cans Las Palmas enchilada sauce
1 can black beans
1 can jalapeno refried beans
1 can any bean blend you like
1 sm. can jalapenos, chopped
1 lg. can green chilis, chopped
1 lg white onion
2 T. chopped garlic
2 roasted pablano peppers
1 bunch cilantro fresh
Shredded Jack cheese

This is easy in a crock pot. Place the pork in crock pot with one can of enchilada sauce. Cook on high overnight. The next morning shred the meat and place back into the crockpot with all remaining ingredients, except peppers, on low heat all day.

Ready for dinner? Add the roasted peppers and garlic; then heat on HI for another 15 minuntes. Serve in a dish garnished with cheese and chopped cilantro on top and tortilla chips.
