Whole Green Chilies, Roasted, Peeled & Seeded

Monterey Jack Cheese
Cooking Oil

Directions:
This is truly a recipe that you don't measure the ingredients. Figure 2-3 Rellenos per person. For approximately 12 Chilies, mix 2 eggs with enough flour to make a fairly thick batter. Fill each chili with a strip of Monterey Jack cheese. Put enough oil in a heavy skillet to cover the chilies about half way up. Dip each filled chili in the batter covering well. Then drop in the hot oil. Fry until golden brown and turn to fry other side. Enjoy!
