1 pkg. lime Jello
1 cup boiling water
1 cup pineapple juice
9 ounce container Cool Whip
2 cups drained, crushed pineapple
2 cups cold cooked rice

Directions:
Directions:
Dissolve Jello in the cup of boiling water and add pineapple juice. Mix well and chill until almost set. Whip until fluffy and add the Cool Whip. Fold in pineapple and rice.

Chill several hours. Decorate with maraschino cherries.

My Mother made this salad often when I was growing up and we loved it. She used one cup of whipping cream (whipped) with 1/4 cup sugar. I add the Cool Whip.
