6 to 7 lb pumpkin, peeled, seeded and membrane removed
4 c sugar
2 c water
4 c vinegar
cinnamon sticks to taste

Directions:
Directions:
Cut pumpkin into 1 inch cubes (should be around 14 cups). Place cubes in a large saucepan and cover with water. Simmer until fork-tender, but not too soft. Drain the pumpkin. Combine vinegar, sugar, and water. Pour over the pumpkin. Add cinnamon sticks and bring to a boil Pack into jars with several cinnamon sticks in each jar and seal or store in refridgerator.
