1 quart buttermilk
1 broiler fryer, about 2.5 lbs., cut up
25 Ritz crackers, finely crushed
2/3 cup flour
1 tsp. salt
1/4 tsp. red pepper
1/2 stick butter

Directions:
Directions:
In a 9x13 pan, pour buttermilk over chicken, cover and refrigerate at least 1 hour; more if possible. Remove chicken from marinade and discard marinade.

Add chicken to combined cracker crumbs, flour, salt & red pepper. Turn evenly to coat.

Place chicken on a 15x10x1 pan sprayed with cooking oil. Drizzle evenly with 1/4 cup (1/2 stick) melted butter.

Bake at 375 for one hour.
