2 c sugar
1 1/2 c oil
4 eggs
1 tsp vanilla
2 1/2 c self-rising flour
1 tsp soda (even with self-rising flour)
2 tsp cinnamon
3 c grated carrots

Cream Cheese Frosting (see recipe in this section)

Directions:
Directions:
Cream sugar, oil, and eggs. Add vanilla. Sift together flour, soda and cinnamon. Add to creamed mixture. Fold in carrots. Pour into 3 greased 8 inch round cake pans. Bake at 350 F for 30 - 45 minutes. Frost with Cream Cheese Frosting.
