2 lbs ground beef
1 medium onion
3 - 19oz. cans enchilada sauce
Large bag shredded cheddar cheese
16 tortillas

Directions:
Directions:
Put thin layer of sauce in bottom of pans (9x13 and 8x8). Put meat, cheese, and a little sauce in each tortilla, roll up, and place in pans. Pour most of sauce over the top. Top with more cheese. Bake 350 for 45 minutes.
