1 beaten egg 1 cup milk 1 cup cracker crumbs 1 can cream-style corn 1/4 cup finely chopped onion 3 tbsp chopped canned pimiento 1 tbsp melted butter
Mix egg, milk, 2/3 cup crumbs, 3/4 tsp salt and dash of pepper. Stir in corn, onion, and pimiento. Turn into 1-quart casserole. Toss melted butter with remaining cracker crumbs and sprinkle over corn mixture. Bake at 350º for 65-70 minutes.
