1 ( 9-inch) pie crust, (deep dish crust works best)

1 lb. sausage, hot or mild (or 1 lb. bacon)

1/3 c. onions, diced

2 c. grated Swiss cheese (or your choice)

1 c. half and half
4 eggs

1/4 c. green peppers, chopped
1/4 c. red peppers, chopped

Directions:
Preheat oven to 375. Prick the bottom of the pie crust five times with a fork and bake for 8-10 minutes until very light brown. Remove from oven and set aside.

Cook sausage or bacon in heavy skillet over medium heat, turning frequently, until browned. If you are using bacon, crumble it after it has been cooked. Remove meat from skillet and drain on paper towels. Add onion to drippings remaining in skillet and cook and stir until tender. Remove from skillet with slotted spoon.

In medium bowl, combine meat with cheese and spread in pre-cooked pie crust. Beat half and half and eggs with wire whisk until smooth. Add green and red peppers to egg mixture. Stir and pour egg mixture over meat in pie shell.

Bake at 375 for 30-40 minutes or until top is puffed, set, and golden brown around edges. Let stand for 5 minutes before cutting.


Usually when Mom fixed this for breakfast at home, she made two, one with sausage and the other with bacon.
