1 Package of Penne Pasta (I use mini penne)
5 large plum tomatoes, seeded and chopped
2 cups fresh spinach
2-4 green onions, chopped (optional)
4-5 tablespoons of olive oil
2 teas. dried or 1 tablespoon chopped fresh oregano
2 teas. dried or 1 tablespoon chopped fresh basil
1/2 t salt
1/2 t pepper
1 (6 ounce) package of basil and tomato crumbled feta cheese
Parmesan cheese

Directions:
Directions:
In bowl, mix tomatoes, spinach, onions, olive oil, oregano, basil, salt and pepper.
Cook pasta as directed; drain.
Add tomato mixture to pasta in pot. Add feta cheese. On low heat cook until heated and cheese is melted. Add Parmesan cheese (to your liking) and cook a few more minutes.

This is a very light pasta. The recipe is quick and easy. You can even prepare the tomato mixture earlier in the day (refrigerate) and then add to pasta when ready.
