1 cup sugar 2 cups water 1/2 cup fresh lemon juice 1 teaspoon lemon rind
Combine all ingredients and bring to a boil. Cook for one minute stirring constantly until sugar dissolves. Allow to cool, and then pour into a 9x13 Pyrex. Cover and freeze for a minimum of 8 hours. Scrape with fork and serve in little dishes or cups like Italian ice.
