1 small eggplant 3/4 pound
1 beaten egg
1/4 c flour
2 TBS oil
1/3 c spaghetti sauce
1 c shredded mozzarella cheese

Directions:
Directions:
Peel eggplant, cut crosswise into 1/2 in thick slices. Dip eggplant in egg then flour, coat both sides about 4-6 min per side. Layer eggplant, sauce, cheese in baking dish bake 400 10-12 minutes
