2 Tbs Butter
1/4 C buttery flavored cracker crumbs
1/4 C chopped pecan nuts
1/4 C water
1/2 tsp salt
1/4 - 1/2 tsp shredded dried onion
1 pound sliced yellow squash or cubed
1/4 c mayonnaise
1/2 c shredded cheddar cheese
1 beaten egg
2 Tbs melted butter
1 1/2 tsp sugar

Directions:

1 qrt casserole
2 TBS butter microwave high 1.5 minutes. Add crumbs and pecans- microwave 2 min. stir after 1 min and poor on wax paper set aside
Small casserole- salt, water, and squash and cover- microwave 8-10 minutes, stir after 4 minutes! Drain
Mix: mayonnaise, egg, cheese, butter, sugar, and onion. pour over squash, mix well and microwave. Add crumb topping- microwave till set- 2-4 minutes let set.

This recipe is from Grandma Jewel's collection. I do remember her making this-- great for hot summer days when you don't want to cook in the oven.
