2 lbs. Ground Beef
1 Egg
2/3 Cup Grated American Cheese
1/2 Cup Apricot Preserves or Jam
1 Cup Bread Crumbs
1/2 tsp. Salt
1/2 Cup Chopped Onion
1 Small Green Pepper, Chopped

Directions:
Directions:
Mix meat with all ingredients and shape into a loaf. Place in a casserole dish sprayed with cooking spray. Mix 1/4 cup apricot preserves with 1/2 cup lemon juice and spoon over the top.Spoon 3 Tblsp. Ketchup on top also. Cover with foil and bake in oven for about 1 1/2 hours at 375.
