Ingredients: 1 egg 1/2 cup shortening (Holsum in Africa) 1 1/4 cups sugar 1 cup milk 1 tsp vanilla 2 1/3 cups all-purpose flour 1/2 cup cocoa 1/2 tsp salt 1/2 tsp baking powder

Directions:Preheat oven to 400 F. In a medium bowl, blend together the egg, shortening and sugar with an electric mixer. Continue beating while adding the milk and vanilla. In another bowl sift together flour, cocoa, salt, and baking powder. Combine dry ingredients with the wet ingredients and beat until smooth. Spoon about 1 tablespoon of the batter in strips about 4 inches long and 1 inch wide on a lightly greased cookie sheet. Bake for 5 to 6 minutes or until the cakes are done. Cool. When the cakes have cooled, spread about a tablespoon of filling on the flat side of one cake and top it off with another cake. |

Notes: I have also lined a muffin tin with muffin papers and sprayed them with pam. Then place 1/2 tablespoon of batter in bottom. This will make approx. 80 cakes or 40 rounds when sandwiched with creme filling.
