3 large egg yolks
1 2/3 cups low fat milk
2 T lemon juice
1 1/2 cup all-purpose flour
1 T sugar
4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 T margarine
3 egg whites

Directions:
Directions:
Add lemon juice to milk and let sit for approx. 5 minutes. Beat egg whites until stiff. Set aside. In separate bowl, mix all dry ingredients together, set aside. In a separate, beat egg yolks well. Beat in milk/lemon juice mixture (milk will look curdled) and dry ingredients. Beat in margarine. Gently fold in beaten egg whites. Use a ladle to put batter on a heated non-stick frying pan. When edges start to turn dry and the bubbles on the battter begin to "pop", turn over and finish cooking.

I use a ladle to pour the mixture into the pan, then use the bottom of the ladle to spread out the mixture to a uniform size.
