1/4 cup oil
1 1/2 to 2 lbs boneless-skinless chicken
1 to 2 lbs cajun sausage
4 cans cajun stewed tomatoes
1 can rotel tomatoes
Rice

Directions:
Directions:
In medium broiler or iron pot, heat 1/4 cup oil. Brown chicken in pot until done; set aside. Remove skin from Cajun Sausage and add to pot. Stir; cook until done, draining any excess oil from pot. Cut cooked chicken up into small chunks; add to pot with sausage. Add cans of tomatoes. Mix together, cover and cook on low heat for 45 to 50 minutes. Stir occasionally. Seve over rice.
