Noodles:
Mix eggs into flour. Add water one tablespoon at at time until you have a ball. Knead ball until smooth and elastic. Let rest 10 minutes. Divide dough into four parts.. Roll dough one part at a time.. Cut into strips (a pizza cutter works great). Let dry about 2 hours. I add noodles to the stock. Use a lot of flour when making noodles. This makes a thicker gravy.

I don't have a recipe. You just do it.
I use a whole chicken or fryer pieces and boil them with celery and onion and herbs until the chicken falls off the bones and then I have a large pot of stock.. Bring the stock to a hard boil. Add the noodles and cook until the noodles are tender. Add the chicken that you removed from the bone. Stir often because it will stick to the bottom of the pot. I use Miller's soup stock to taste. Server over mashed potatoes.
