1& 1/2 lbs. of yellow squash
1 can of cream of chicken soup
8 oz. of sour cream
2 small onions, chopped fine
1 carrot, grated
1& 1/2 sticks of margarine
1 pkg. (8 oz.) of Pepperidge Farm herb stuffing mix
salt & pepper to taste

Directions:
Directions:
Cook squash, drain well and mash. Combine all ingredients except 1/2 stick of margarine and 1/2 of stuffing mix. Place mixture in a 2 1/2 quart casserole. Melt 1/2 stick of margarine and toss with 1/2 the stuffing mix. Spread over casserole. Bake, uncovered at 350 for 35 minutes.
