· 6 Palomia Steaks sliced thin and cut in half
· 3 pieces of garlic
· 1 medium onion
· ½ cup of tomato sauce
· ¼ cup of dry wine
· ½ teaspoon of cumin
· ½ teaspoon of oregano
· ½ teaspoon of pepper
· 1 laurel leaf
· ¼ cup of olive oil (less is more)
· 1 cup of water
· 1green pepper
· lemon juice to taste

Coat the bottom of the pan with olive oil and heat. While that is heating, prepare the Palomia Steaks by adding to them lemon juice, salt, onion powder, garlic powder (add to taste). Once the oil is heated, sauté the onion, garlic, green pepper, cumin, oregano, salt, and pepper to form what is known as a sofrito. Once the onions are translucent, pour your mixture into a bowl and set aside.

Add butter to pan and melt. Once almost melted, add paolmia steaks to pan and brown on both sides. Once the steaks are brown, add the sofrito and cook for about 5 minutes. Add dry wine, tomato sauce, water and laurel leaf and bring to a boil. Once at a low boil cover and reduce the heat and cook for approximately 30 minutes.

Bistec en Cazuela was one of my favorite meals my mother prepared. It wasn't prepared very often but, when it was, I was in heaven. I have tried to keep the original recipe in tact but, along the way, have found items on the market that you can use to spice up the flavor. Sofrito can be purchased and added at the stage when the steaks are brown and the home made sofrito is mixed with the meat. Please add spices to taste throughout the course of cooking.
