2 cups flour
1/2 tsp. baking powder
1/4 tsp. salt
2 cups grated potatoes or more (drain liquid)
1 egg, well beaten
1/2 lb. salt pork, ham or sausage

Directions:
Directions:
Mix dry ingredients and mix as much grated potatoes into the flour as possible. Add beaten egg.
Press a cube of salt pork, ham or sausage into each dumpling that you shape into a ball with your hands. Dip your hands in cold water for each ball you make. Drop into salted boiling water. Boil for about one hour. Stir often to prevent sticking to the bottom of the kettle.
Serve hot with butter. Leftovers can be sliced into pieces and fried in butter the next day.

Mom has mentioned potato dumplings (Klub). She used to love them and I bet when she gets ahold of this recipe she will try to make them. Thank you, this will probably be one of her favorite recipes. You and your family have been such a great support and a help in adding Scandinavian recipes, which I had so hoped we would get a lot of those in this book. Thanks for all the laughs and keep in touch. I am so glad that we have all found each other after all these years!
