1 c. cut-up dates
1 c. boiling water
1 tsp. baking soda
1/2 c. shortening
1 c. white sugar
1 beaten egg
1 1/2 c. flour plus 2 T.
1/2 tsp. salt
1 tsp. vanilla
1 c. finely chopped pecans (opt.)

Directions:
Directions:
Mix dates, boiling water and soda together; set aside and let cool. Cream shortening and sugar; add the beaten egg. On low speed add the flour and salt. Stir in cooled date mixture, vanilla and nuts. Bake in greased mini-muffin tins at 350º for 12 minutes. Test to make sure they are done. *Roll in granulated sugar before serving.

This was one of Mildred Soderberg's recipes. She didn't say how long to bake them so I estimated. The sugar makes them extra special.
