2# Rump Roast
1 Medium Onion, Diced
2 Cloves Garlic, Diced
2 tsp. Salt

3 Eggs

Directions:
In a heavy skillet, braise the beef in olive oil making sure it is good and brown on all sides. Put the roast, onion, garlic and salt in a large pot and cover with water. Bring to a boil and then reduce the heat to simmer for 2-3 hours adding water as needed. When beef is cooked well, remove from pot and cut into cubes. Return to pot.
To make the Noodles: Mix the eggs and enough flour (start with 1 1/2 cups) to make a dough about the consistency of pie dough. Cover a flat surface with flour, knead dough a little and roll thin. Let dry approximately 4 hours. I don't let them get completely dry. Cut in wide strips adding flour as needed. Stack the strips on top of each other using plenty of four between. Cut into thin strips. Bring the beef and broth to a boil and add the noodles. Cook approximately 15 minutes or until noodles are done. If using a pasta maker, press dough through maker to fairly thin and use the noodle cutter to cut them. Let dry a little before cooking. All measurements are approximate.
