1 whole chicken quartered -
2 stalks celery chopped -
1 T. salt -
1 tsp pepper -
1 tsp poultry seasoning -
1 T parsley -
2 sm cans chicken broth -
1 large bag egg noodles

Directions:
Directions:
Place 1st 6 ingredients in soup pot and cover with cold water. Bring to a boil - then reduce heat to simmer and cover pot. Simmer 1 1/2 - 2 hours until chicken is "fall apart" done. Watch to be sure water level stays above chicken in pot while simmering. Remove chicken pieces from pot, let cool and de-bone. While chicken cools, add chicken broth to pot with remaining liquid. Bring to a boil and add noodles. Cook until noodles are done. Remove from heat and add chicken meat back to pot. Stir, re-season to taste, and serve.
