Fill a pan with enough cold water to cover eggs by 1". Add 2 t. salt per quart of water; bring to boil. Using the oldest eggs in your frig, lower into boiling water with a slotted spoon. Reduce water to simmer and cook uncovered for 10 minutes. Immediately plunge eggs into cold water. Eggs will be easier to peel and won't develop a green ring around yolk.
