3 large beets, peeled if desired
1 yellow onion, cut into thirds
6 basil sprigs
3 tbsp. unsalted butter

Directions:
Directions:
Cut beets crosswise in half. Put the two halves onto a square of heavy aluminum foil. Sandwich beef halves with onion slice, 2 basil sprigs and 1 tbsp. butter. Wrap well.
Grill over hot coals until very tender, about 20-30 minutes.
