zucchini
1 onion
1 egg
1/2 cup flour
1 tsp. baking powder
parsley flakes (optional)
oil for frying

Directions:
Directions:
Wash and dry zucchini (do not peel). Grate the zucchini and then strain in sifter until mostly all water is removed. Grate onion. In bowl add onion and the egg and mix. Add strained zucchini to bowl and add slowly the flour, and baking powder. If you like, add some parsley flakes. Fry until golden on one side, then turn over and finish frying. Serve hot.
