1 cup uncooked long grain rice
2 cups boiling water
1/4 cup oil
2 eggs
1/2 cup cooked meat or shrimp or 4-5 slices cooked bacon, crumbled
1 tsp. salt
1/4 tsp. pepper
1/4 cup chopped green onion
1 1/2 tbsp. soy sauce

Directions:

Add 1 cup long grain rice to about 2 cups boiling water. Cover saucepan and bring to a quick boil; lower flame and cook very slowly for 35-40 minutes or until rice is done but not soft. When done, shut off heat and allow rice to remain covered for 15 minutes. This makes about 3 cups cooked rice.
In a large skillet, pour 1/4 cup oil. When oil is hot, add two slightly beaten eggs and cook for 3-4 minutes. Break egg in small pieces as it cooks. Add about 1/2 cup cooked meat or shrimp or crumbled bacon.
Add the rice, salt and pepper, onion and soy sauce. Blend all ingredients well and cook over moderate flame for 7-8 minutes.
