12 Corn Tortillas
2 Cans Chopped Ripe Olives
1 Cup Chopped Onion
2 Cups Shredded Cheddar Cheese
Enchilada Sauce (see recipe under sauces)

Directions:
Directions:
Heat in a small (9") skillet approximately 1/2 cup vegetable oil. Dip a tortilla in the oil to soften, then dip it in the hot enchilada sauce, coating both sides. place on a plate; fill with the ripe olives, onion & cheese. Bring the sides together and place on a greased baking sheet, seam side down. Repeat with each tortilla. Spoon a small amount of the sauce on each enchilada, saving some sauce to serve with them. Bake in 375 for approximately 20 minutes. You may use more or less of the filling depending on how full you make them. If I have left overs I sprinkle them on top of each enchilada.

Don got this recipe over 50 years ago from a Mexican lady he worked with at Hughes Aircraft in California.
