10 lbs chitterlings, cleaned and boil until tender in pot with salt, peppers, onions and crushed red peppers.
1 cup flour
2 eggs beaten
1/2 cup water
1 cup oil
Sauce: 1/4 cup ketchup, 1/4 cup mayonnaise, 3 dashes of hot sauce, 3 dashes of worcestershire sauce

Directions:
Directions:
Heat in skillet 1 cup oil. Make a batter with flour, eggs, and water. Dip chitterlings; cut into medium pieces into batter, then into hot oil in skillet. Do not let pieces touch. Fry until golden brown on both sides. Drain on paper towel. Mix sauce and dip chitterlings into sauce.
