2 cups Zucchini, grated,
3 eggs beaten,
2 cups sugar,
2 tsp vanilla,
1 cup oil,
3 cups flour,
1 tsp baking soda,
1 tsp salt,
1/2 tsp baking powder,
1 tsp cinnamon,
1/2 cups nuts or raisins chopped (if desired)

Directions:
Directions:
Beats eggs, add oil, sugar, vanilla and zucchini; cream together. Sift dry ingredients and add to creamed mixture. Add raisin or nuts. Bake at 325 for 1 hour. Makes 2 loaves
