Left over mashed potatoes

Directions:
Directions:
If you have leftover mashed potatoes (or make extra, so there are leftovers for the next day). Turn them into fluffy little potato patties.
Shape them and brush with a beaten egg yolk. Sprinkle with paprika and place on a greased baking sheet. Bake at 375 degrees until well heated.

Or shape into patties and flour both sides. Fry in butter until golden brown.

I like to add onions, garlic or other spices depending on the meal. They are very good for breakfast with some chopped onions & green peppers (saute veggies before adding). And as you have probably noticed I add Mrs. Dash to almost everything! :-) j
