2 T. olive oil
1 lb. Italian sausage
3 large garlic cloves, minced
1 - 28 oz. can of diced tomatoes
1 lb. frozen cheese tortellini
6 cups chicken stock
1 large bag fresh spinach, torn in bite size pieces
1/2 cup Romano cheese, shredded

Directions:
Directions:
Cook sausage and garlic in olive oil. Add tomatoes and chicken stock. Simmer 10-15 minutes. Add spinach and tortellini. Cook until tortellini are tender (about 10 minutes). Add cheese. Salt and pepper to taste.
