Country Captain Chicken Recipe

2 lbs chicken breast
1 medium onion – chopped
2 cloves garlic – chopped
¼ tsp pepper
2 tsp salt
¼ tsp thyme
2 Tbsp curry powder
2 tsp parsley
1 can chopped tomatoes
2 cups hot water
season-all season salt

Roll rinsed chicken in flour with season salt. Fry until lightly brown. Set aside. Sauté onions and garlic until clear.

In large soup pot combine tomatoes, onions, garlic, salt, pepper, thyme, parsley, and curry powder. Add 2 cups hot water and chicken. Cover and bring to slow boil and simmer for 30 to 40 minutes or until tender. Serve over rice.
