6 large idaho potatoes
12 oz frozen South African rock lobster tails
1/2 cup butter or margarine
1 cup milk or half and half
2 T minced onion or scallions(green onions)
1 cup grated sharp cheddar cheese
salt and pepper to taste

Directions:
Directions:
Bake potatoes in a preheated moderate oven (350)
for 1 hour or until easily pierced. While potatoes are baking, drop frozen rock lobster tails into boiling salted water. When water reboils, drain immediately and drench with cold water. With scissors, remove underside membrane and pull out
meat in one piece. Cut meat into 1/2 inch thick crosswise . Reserve a few slices for garnishing tops
of potatoes. Remove potatoes from oven and thinly
slice tops from potatoes. Scoop out potato into a large bowl, reserving potato skins for refilling. Mash potatoes beat in butter and milk, onion and cheese. Beat until smooth and well blended. Stir in Rock Lobster meat and season with salt and pepper. Use mixture to stuff potatoes. Place in oven and bake for another 15 minutes. Remove and serve,
