4 c. diced boiled potatoes, freshly cooked and still warm
1 c. celery, finely chopped
2 eggs, hard-cooked and coarsely chopped
1/4 c. sweet mixed pickles, chopped and well-drained
1/4 c. green onion, minced
1/4 c. parsley, minced
1 c. mayonnaise
2 tsp. prepared mustard
1/2 tsp. celery seed
1 tsp. salt, more if desired

Directions:
Directions:

Combine potatoes, celery, eggs, pickles, green onion and parsley in salad bowl. Mix together remaining ingredients and pour over potato mixture. Toss until mixed. Cover and refrigerate several hours before serving.
