6 med. large yellow squash
3 c. bread crumbs
1 c. grated cheese
1 med. onion, grated coarsely
3 T. minced parsley
1 tsp. salt
1/8 tsp. pepper
2 T. butter
2 eggs, beaten

Directions:
Directions:
Cook squash in small amount of water. Drain and save water. Mash squash. Place in buttered casserole.

Soak bread crumbs until just softened, in water that squash was in. Cover squash with crumbs. Bake at 350 for about 1 hour. Sprinkle with cheese.
