4 c. chicken broth
4 medium potatoes, diced
3 medium onions, finely chopped
1/2 tsp. salt
1/2 c. whipping cream
3 Tbsp. parsley

Directions:
Directions:

In soup pot, bring broth, potatoes, onions and salt to boil. Simmer covered 20 minutes. With masher, coarsely mash potatoes in broth.

Add whipping cream and parsley. Taste and correct seasonings. Heat 5 minutes.
