1 C boiling water
1 C bran cereal
1/2 C butter
1 C sugar
2 eggs, beaten
2 C milk
2 1/2 C flour
2 1/2 tsp baking soda
1/2 tsp salt
2 more C bran cereal
Microwave muffin cooker

Directions:
Directions:
Boil water in measuring cup in microwave. Pour first cup bran cereal over top and set aside.

Cream butter and sugar, then add eggs, and milk. Stir in water/bran mixture. Fold in rest of ingredients,

Makes 2 quarts batter that can be stored in glass container in fridge up to 6 weeks. Use microwavable muffin pan to bake. Microwave 2 muffins on high for 1 minute.
