3 eggs beaten
3 cups grated zucchini
2 cups sugar
1 cup vegetable oil
1 tbsp. Vanilla
3 cups flour
1 tbsp. Cinnamon
2 tsp. Baking Powder
1 tsp. Salt
3/4 Tsp. Baking Soda
1/2 cup chopped nuts (pecans or whatever you want) (optional)

Directions:
Directions:
Combine eggs, zucchini, sugar, oil & vanilla. Mix well. Mix dry ingredients together in separate bowl. Add dry ingredients to wet ingredients a little at a time and mix together. Add nuts, mix well. Spoon into 2 5 x 9 loaf pans sprayed with Pam. Bake at 325 for 1 hour.
