6 qt zucchini, peeled, seeded and cut in chunks
1 c hydrated (pickling) lime
1 gal water
4 c white vinegar
3 Tbsp whole pickling spice (remove red peppers)
3 c water
2 tsp salt
10 c sugar

Directions:
Directions:
Soak zucchini in water mixed with lime for 24 hours, stirring often. Rinse in cold water until clear. Let stand for 3 hours in clear water. Mix vinegar, spices, salt and sugar with 3 cups water and bring to a boil. Pour over drained zucchini. Let stand for 24 hours. Bring to a boil and simmer for 35 to 60 minutes, or until clear. Pack in hot, sterilized jars. Cover with syrup and seal.
