3 c grated zucchini or 3-5 very ripe bananas (you know how black I like them)
1 c oil
3 c sugar
1/2 tsp salt
1 1/2 tsp cinnamon
4 eggs
3 c flour
2 tsp baking powder
1 tsp baking soda
chopped nuts (opt)
1/2 c coconut (opt)

Divide evenly into bread pans about half to two thirds full. Bake@300 for 1 hour.
Also good as little muffins. Divide into muffin tins and bake about half an hour. Check for doneness by pressing in the middle until they spring back.

It has a lot of sugar but it make a nice crust that says "eat me!"
When Lori makes it, she frosts it with cream cheese frosting.
