40 garlic cloves, whole and peeled (3-4 heads)
1 whole chicken or favorite chicken parts, with skin
2 - 3 tablespoons butter, room temperature
Coarse salt and ground pepper
6 sprigs fresh thyme

Directions:
Directions:
Preheat oven to 475 degrees. Remove giblets from whole chicken. Rinse chicken and pat dry. Place chicken in large ovenproof skillet or roasting pan. Rub all over with 1 tablespoon butter; season with salt and pepper. Add thyme, garlic and remaining tablespoon butter (may need more) to the skillet.
Roast, basting occasionally with juices and stirring garlic. Check temperature with meat thermometer inserted in the thickest part of a thigh (avoiding bone)until it registers 165 degrees. Roast for 1 - 1 1/2 hours or until done. Transfer to a platter and allow to rest for 10 - 15 minutes. Carve or pull chicken and serve with garlic and pan juices.
